The province of San Ignacio lies between the foothills of the Andes and the Amazon in the far north of the country and is bordered by the Marañon Valley and its steep gorges.
Despite the altitude between 1000 and 1250 meters, the exceptional microclimate and the isolation made it possible to obtain a large number of cocoa that were considered to have disappeared for a long time: a genetically completely pure Nacional.
Since 2010, this cocoa has been the subject of an exceptional conservation program thanks to the support of 400 farmers in the region who have gathered around a post-harvest model processing center.
After several years of experimentation, a strict fermentation and drying protocol was developed that enables the extremely delicate flavors of this cocoa, unique in the world, to be perfectly expressed.
