St. Vincent and the Grenadines! North of Venezuela and between the Caribbean islands of Granada and Barbados is the small island of St. Vincent and the Grenadines. The cocoa grows all over the island and is managed by the St. Vincent Cocoa Company. They cultivate 250 hectares of land and buy cocoa from around 100 farmers. The cocoa grows between corn, bananas and ginger as well as in the shade of coconut and mahogany trees. The cocoa is fermented at a central point. These cocoa beans create a full, strong flavor profile with lots of citrus and lime peel. Tones of bread and cashew nuts. Just like in wine, the tannins stand out.
