The chocolate manufacturer from Krak, Mark Schimmel, wants to trace cocoa and its taste development back to its origin: "Every bag of cocoa beans is different, every new harvest is different from the previous harvest. I see it as my challenge to get the best out of the cocoa bean every time to make the most beautiful chocolates. I do very little to influence the taste; on the contrary, it works I want to harmonize the beautiful cocoa and keep it in its value. Because I want to stay as close as possible to the taste profile of the origin and emphasize what makes the cocoa bean so unique. That is my passion and I am proud of it to share."
In Dutch, "Krak" means to grind. Just like the cocoa bean is ground to make chocolate.
