In a traditional process, the cocoa beans from Gebrüder Grimm are winnowed, roasted, ground and conched with the addition of raw cane sugar and cocoa butter in a melangeur for up to 72 hours. The maturation takes place for at least 3 weeks at room temperature in a specialized cabinet.
The chocolate of the Gebrüder Grimm is made with care, passion and a lot of manual work in their chocolate factory.
