Garçoa is a small, puristic bean to bar chocolate manufacturer in Zurich Switzerland. The cocoa is sourced directly from Rio Piura in the Chulucanas area, Peru. In Switzerland, beans are roasted, winnowed and ground in small batches. The finished chocolate is poured by hand and also packaged manually. Everything is minimally processed, helping to evolve the flavor of the cocoa. Only two ingredients are used in this chocolate bar - cocoa beans and cane sugar, without cocoa butter and without additives.
Garçoa uses a single-origin Porcelana cocoa bean here. Despite the high cocoa content, this results in a bar with light color tones.
