Kay Keussen TaucherliThis is Kay Keussen from Taucherli Chocolate. He is one of the few Swiss chocolate manufacturers who produces all the steps from the cocoa bean to the finished chocolate bar himself in his small chocolate factory in Adliswil near Zurich. He gets his cocoa beans from fincas that specialize in planting single-variety and rare cocoa beans. He then spends hours finding the right roast profile and conche time, which he notes on the packaging along with the harvest year. The finest bean to bar chocolate made in Zurich.
