I couldn’t have left Paris after the Salon du Chocolate, without visiting the bean to bar chocolate manufacturer of Alain Ducasse. Monsieur Ducasse is more known as a star chef, but in 2013 he decided to start a quest to rediscover the “true flavors of chocolate”. For this, he built a bean-to-bar chocolate manufactury using machines of the 1960s mids in Paris. So, while shopping for some rare origins bars and lovely pralines one has the rare opportunity to gaze through the window the craftsmanship and patient work that is involved in making chocolate.
